I found this winner last night. I plan on using this in class next week.
While you’re rolling with the tiger, you can make yourself another kind of mashup. A chickpea-avocado wrap kind of mashup.
I love a wrap. If you can put it in a tortilla, you should. One of my old favs was cottage cheese wrapped up in a tortilla with hot sauce. Don’t hate. It sounds kind of weird, but it is awesome. I don’t eat cottage cheese anymore (after I went vegan for a bit, I just couldn’t stomach it anymore), but this use to be a go-to lunch for me. These days if it is made of chickpeas, I want to stuff it all in my mouth.
If you need an easy lunch idea, this is for you!
- can of chickpeas
- 100 calorie wholly guacamole
- tortilla of your choice (my fav are the whole wheat La Tortilla Factory tortillas)
- laughing cow cheese
- salt & pepper
Wash and drain the chickpeas, then place in a bowl and mash. I like to mash with our Cuisinart hand blender. Add in guacamole and continue mashing. Add in salt & pepper to taste. Grab that tortilla and smear in the laughing cow cheese. Add in 1/3 – 1/2 of the chickpea/avocado mash and top with cholula. Throw in some spinach leaves and wrap it all up. BAM! Lunch is ready!
